- 12 slices multigrain bread, crusts trimmed
- 1/4 c. low fat mayonnaise
- 1/2 tsp. garlic salt
- 1/8 tsp. ground ginger
- 1/2 c. green onions (with tops), chopped
- 1/2 c. celery, chopped
- 1/2 c. water chestnuts, sliced
- 4 hard-cooked eggs, chopped
- 5 oz. frozen cooked shrimp, thawed and drained
- additional cooked shrimp, optional
- sliced radishes, optional
- thinly sliced green onion tops, optional
说明:
- Preheat broiler.
- Cut each bread slice in half diagonally. Broil 6-inches from heat until lightly toasted, about 1 to 2 min. Set aside and preheat oven to 425°F
- Place mayonnaise, garlic salt, ginger, onions, celery, water chestnuts and eggs in blender or food processor container. Cover. Blend at medium speed or process, scraping down sides occasionally, until vegetables are finely chopped and mixture is well blended. Stir in shrimp.
- Spread shrimp mixture evenly onto reserved toast. Bake until warmed through, 5 - 10 min. Garnish with additional shrimp, radish slices and green onion tops, if desired.
