- 4 Tbsp. Texas Rio Star Grapefruit juice (reserved from sectioning)
- 36 vanilla wafers
- 2 (8 oz.) pkgs. of cream cheese, softened
- 3/4 c. sugar
- 2 eggs
- 2 c. strawberry glaze
- 36 paper muffin cup liners
- whipped cream
说明：
- Place paper liners in muffin tins. Put 1 vanilla wafer in each. Combine cream cheese, sugar, eggs, and grapefruit juice and beat until smooth and creamy.
- Fill each muffin cup half full. Bake at 350° for 15-20 min. Cool thoroughly.
- Gently fold grapefruit sections and strawberry glaze together. Top each cheesecake with grapefruit mixture and chill. Serve with whipped cream if desired.
