- 2 NC sweet potatoes, peeled and cubed (about 3 c.)
- 1 medium onion, chopped
- 1 clove garlic
- 1/2 tsp. salt
- 1/4 tsp. chili powder
- 1/4 tsp. ground cumin
- 1/8 tsp. pepper
- 2 cans (14 1/2 oz. each) chicken broth
- 1 1/3 c. milk
- 1/4 c. refrigerated salsa
- green onion sprigs
说明:
- In 2-quart saucepan, combine first eight ingredients. Bring to boil; reduce heat and simmer 10 min. or until sweet potatoes are tender.
- Puree in blender or food processor until smooth. Return to saucepan; add milk and heat through.
- Serve garnished with salsa and green onion.
Makes 5 1/2 cups; Yields 4 - 6 servings
