- 12 oz. monkfish fillets (fresh or defrosted), skinned and cubed in approx. 12 pieces
- 6 prosciutto slices
- salt and pepper, to taste

- Preheat grill. Cut each prosciutto slice in half and wrap around the cubes of fish. Secure with a toothpick and season.
- Cook on a moderately heated grill for 5-7 min, turning once.
