Dressing:
2 tsp. wasabi paste or 2 Tbsp. Dijon mustard
2 Tbsp. extra virgin olive oil
1/4 c. Japanese seasoned rice vinegar
Juice of 1 lemon
1/4 c. frozen orange juice concentrate, thawed
2 Tbsp. pickled ginger, minced
1/2 c. California Zante currants
Salt and freshly ground pepper

Salad
8 oz. thin dried soba noodles
2 Tbsp. vegetable oil, divided
4 skinless salmon fillets (6 oz. each)
Kosher salt and freshly ground black pepper
8 c. mixed salad greens
1 c. thinly sliced English cucumber
2 med. green onions, sliced diagonally (green and white parts)
4 oz. piece daikon radish, peeled and cut in matchstick-size pieces

Dressing:
- Combine dressing ingredients in a small bowl; whisk together. Set aside. (Can be prepared a day or two ahead; kept tightly covered and refrigerated until needed.)
Salad:
- Bring 8 c. of lightly salted water to a boil and cook the noodles for 3 to 4 min. or until just tender. Do not over cook. Cool the noodles under cold running water. Toss the noodles with some of the vegetable oil and refrigerate, covered tightly, until needed.
- Season the salmon with salt and pepper. Heat the remaining oil in a large sauté pan over medium-high heat. Sauté salmon fillets for 2 to 3 min. on each side (or to desired doneness). Keep warm.
To Assemble:
- Arrange a base of the greens on each of 4 salad plates.
- In a mixing bowl toss the noodles, cucumbers, green onions, daikon and orange segments with half the dressing.
- Place a mound of the dressed noodle mixture in the center of the greens. Top each salad with a warm salmon fillet and drizzle the remaining dressing over fish and around the salads.
